Ingredients
For Chicken Marination:
- Chicken legs – 5 to 6
- Hot sauce – 2 tbsp
- Garlic powder – 1 tsp
- Red chili powder – 1 tbsp
- Ginger powder – 1 tsp
- Salt – 1 tsp
- Lemon juice – 2 tbsp
For Flour Coating:
- All-purpose flour – 2 cups
- Red chili powder – 2 tbsp
- Salt – 1 tsp
For Frying:
- Chilled water – as required
- Oil – for deep frying
Instructions
- Prepare the Chicken:
- Wash and pat dry the chicken legs.
- Make deep cuts in each piece to help the marinade soak in.
- Marinate:
- In a bowl, combine chicken legs with hot sauce, garlic powder, red chili powder, ginger powder, salt, and lemon juice.
- Mix well to coat evenly, cover, and let it marinate for at least 1 hour (overnight is best).
- Prepare the Flour Coating:
- In another bowl, mix all-purpose flour, red chili powder, and salt. Set aside.
- Coat the Chicken:
- Take a marinated chicken leg, coat it well in the flour mixture.
- Dip it into chilled water for 1–2 seconds.
- Then coat it again in the flour mixture for that signature crispy crust.
- Fry:
- Heat oil in a deep pan over medium heat.
- Fry the chicken legs until golden brown and cooked through (about 12–15 minutes).
- Remove and drain on a paper towel.
