Ingredients

For Chicken Marination:

  • Chicken legs – 5 to 6
  • Hot sauce – 2 tbsp
  • Garlic powder – 1 tsp
  • Red chili powder – 1 tbsp
  • Ginger powder – 1 tsp
  • Salt – 1 tsp
  • Lemon juice – 2 tbsp

For Flour Coating:

  • All-purpose flour – 2 cups
  • Red chili powder – 2 tbsp
  • Salt – 1 tsp

For Frying:

  • Chilled water – as required
  • Oil – for deep frying

Instructions

  1. Prepare the Chicken:
    • Wash and pat dry the chicken legs.
    • Make deep cuts in each piece to help the marinade soak in.
  2. Marinate:
    • In a bowl, combine chicken legs with hot sauce, garlic powder, red chili powder, ginger powder, salt, and lemon juice.
    • Mix well to coat evenly, cover, and let it marinate for at least 1 hour (overnight is best).
  3. Prepare the Flour Coating:
    • In another bowl, mix all-purpose flour, red chili powder, and salt. Set aside.
  4. Coat the Chicken:
    • Take a marinated chicken leg, coat it well in the flour mixture.
    • Dip it into chilled water for 1–2 seconds.
    • Then coat it again in the flour mixture for that signature crispy crust.
  5. Fry:
    • Heat oil in a deep pan over medium heat.
    • Fry the chicken legs until golden brown and cooked through (about 12–15 minutes).
    • Remove and drain on a paper towel.
  6. Serve:
