Islamabad: Mixed vegetable curry is a delectable and nutritious dish composed of an assortment of vegetables, brimming with essential vitamins, minerals, and antioxidants beneficial for health. Loved both in rural villages and bustling urban areas, it pairs perfectly with hot parathas or rotis.
This curry requires only a handful of ingredients, making it incredibly simple to prepare. Here’s how to make it:
Ingredients:
- 1 cup peas (shelled)
- 2 carrots (cut into rounds or squares)
- 4 potatoes (cut into small squares)
- 4 pieces of dried khatai
- 4 cloves of garlic (peeled)
- A bunch of fenugreek greens
- 6 green chillies
- 6 dried red peppers
- 10 beans
- 1 tablespoon fenugreek seeds
- A bowl of oil
- 2 bunches of soya (finely chopped)
- 1 teaspoon white cumin
- 1 teaspoon turmeric
- Salt to taste
Method:
Heat oil in a pan and fry the potatoes until they turn golden brown. Set aside.
In another pan, dry roast the fenugreek seeds until fragrant.
Add all the vegetables to the pan with the fenugreek seeds and lightly fry them. Reduce the heat and allow the vegetables to release their moisture.
Once the water starts to dry up, add the sour cream, green chillies, and pre-fried potatoes to the pan. Mix well.
Sprinkle in the white cumin, turmeric, and salt to taste. Stir until all the ingredients are well combined.
Cook for a few more minutes until the flavors meld together and the vegetables are tender.
Serve hot with parathas or rotis.
