Chatkhara Mutton Malai Boti Recipe

Ingredients
For Boiled Mutton:
- Mutton – 1 kg
- Turmeric powder – 1/2 tsp
- Salt – 1/2 tsp
- Ginger garlic paste – 1 tbsp
- Water – 5 to 6 cups
- Lemon juice – 1 tbsp
- Red chili flakes – 1 tbsp
For Malai Sauce:
- MilkPak Dairy Cream – 1 pack
- Garlic powder – 1 tsp
- Salt – 1/2 tsp
For Marination (Chatkhara Spice Mix):
- MilkPak Yogurt – quantity as needed
- Red chili powder
- Coriander seeds (crushed)
- Paprika powder
- Hot sauce
- Chaat masala
- Salt
- Lemon juice
- Red chili flakes
Other:
- Oil – 1/2 cup
- Marinated mutton boti
Directions
- Boil Mutton:
In a preheated pot, add mutton, turmeric powder, salt, ginger garlic paste, and water. Bring it to a boil, skimming off any scum. Cover and cook until the mutton is 90% done. - Prepare Marinade:
In a bowl, combine MilkPak Yogurt, red chili powder, crushed coriander seeds, paprika powder, hot sauce, chaat masala, salt, lemon juice, and red chili flakes. Mix well and coat the boiled mutton with this marinade. Set aside. - Make Malai Sauce:
In another bowl, mix MilkPak Dairy Cream with garlic powder and salt. Set aside. - Cook Mutton Boti:
Heat oil in a pan and fry the marinated mutton pieces for 4-5 minutes until nicely browned. - Serve:
Dish out the fried mutton boti and drizzle the prepared malai sauce over it.
