Ingredients: For Chicken Stock

  • 400g boneless chicken cubes
  • 250g chicken bones
  • 1 cup onion cubes
  • 3-4 garlic cloves
  • 1 tbsp black peppercorns
  • 1 tbsp salt
  • 2 liters water

For Chicken Macaroni Corn Soup:

  • 1 ½ liters chicken stock
  • 1 cup crushed sweet corn
  • ¼ cup chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp hot sauce
  • 1 tsp black pepper powder
  • 1 tsp salt
  • 1 cup boiled and shredded chicken
  • 1 ½ cups boiled macaroni
  • ¼ cup sweet corn
  • 4 tbsp corn flour + ½ cup water (slurry)
  • Chopped green onions for garnish

Instructions:

Prepare the Chicken Stock: In a pot, combine the chicken boneless cubes, chicken bones, onion, garlic, black peppercorns, salt, and water. Bring to a boil and simmer for 15-20 minutes, skimming off any scum. Once ready, separate the chicken and vegetables from the stock, reserving the flavorful liquid for later use.

Make the Soup: In a clean pot, pour in the prepared chicken stock. Add the crushed sweet corn, chili sauce, soy sauce, hot sauce, black pepper powder, and salt. Stir in the shredded chicken and let it cook for 3-4 minutes, allowing the flavors to meld together.

Add the Macaroni and Thicken: Toss in the boiled macaroni and additional sweet corn. Mix everything well. Then, add the slurry (corn flour and water mixture) to thicken the soup. Stir continuously and cook until it reaches a creamy consistency.

Serve and Garnish: Dish out the soup into bowls and garnish with freshly chopped green onions.
