Islamabad: Vegetable Hot and Sour Soup, known for its spicy and tangy kick, is a flavorful and healthy choice for any occasion. This hearty soup, filled with fresh vegetables, offers a delightful balance of savory and spicy flavors. Here’s how to make it:

Ingredients:

For Vegetable Stock:
Water – 2 liters
Carrot – 1 cup
Onion – 1 cup
Green onion (white part) – 1 cup
Garlic cloves – 3-4
Whole black pepper – 1 tbsp
Salt – 1 tbsp
For Soup:
Chopped carrot – 1 cup
French beans – 1 cup
Chopped cabbage – 1 cup
Thai chili sauce – 2 tbsp
Soya sauce – 1 tbsp
Chili sauce – 1 tbsp
Dark soy sauce – 1 tsp
Vegetable stock – 1 ½ liters
Crushed black pepper – 1 tsp
Salt – 1 tsp
Slurry (corn flour – ¼ cup, water – ½ cup)
Egg whites: 3
Chopped green onion—as needed

Directions:

In a pot, heat water and add the carrot, onion, green onion, garlic, whole black pepper, and salt. Let it boil for 15-20 minutes.

Separate the vegetables and reserve the stock for later use.

In another pot, heat oil and sauté the peas, carrot, French beans, and cabbage for a minute.

Add Thai chili sauce, soy sauce, chili sauce, and dark soy sauce, cooking for 2-3 minutes.

Pour in the vegetable stock, add crushed black pepper and salt, and mix well.

Stir in the slurry and cook until the soup thickens.

Slowly add egg whites and let it cook for 2-3 minutes on low heat.

Garnish with chopped green onion, and your vegetable hot and sour soup is ready to enjoy!
