Ingredients
Cake Base:
- Butter, as required
- Almonds (halved), as required
- Almonds (crushed), as required
Cake:
- 400 g butter
- 400 g sugar
- 1 tsp vanilla essence
- 6 eggs
- 400 g all-purpose flour
- 1 tbsp baking powder
Topping:
- 1/2 cup mixed fruit jam
- 2 tbsp hot water
Directions
- Prepare the Cake Base:
- Brush butter inside a cake mold.
- Place halved almonds evenly on the bottom of the mold.
- Sprinkle crushed almonds over the almonds.
- Refrigerate for 15 minutes.
- Make the Cake:
- In a bowl, cream together butter and sugar. Add vanilla essence and mix well.
- Gradually add eggs, beating well after each addition.
- Sift together flour and baking powder, then fold into the butter mixture using a spatula.
- Pour the batter into the prepared cake mold.
- Bake the Cake:
- Bake in a preheated oven at 160°C (320°F) for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and trim any uneven top. Invert the cake onto a plate so the almond side is on top.
- Prepare the Topping:
- In a bowl, mix together the jam and hot water until smooth.
- Finish and Serve:
- Pour the topping over the cake.
