Ingredients

Cake Base:

  • Butter, as required
  • Almonds (halved), as required
  • Almonds (crushed), as required

Cake:

  • 400 g butter
  • 400 g sugar
  • 1 tsp vanilla essence
  • 6 eggs
  • 400 g all-purpose flour
  • 1 tbsp baking powder

Topping:

  • 1/2 cup mixed fruit jam
  • 2 tbsp hot water

Directions

  1. Prepare the Cake Base:
    • Brush butter inside a cake mold.
    • Place halved almonds evenly on the bottom of the mold.
    • Sprinkle crushed almonds over the almonds.
    • Refrigerate for 15 minutes.
  2. Make the Cake:
    • In a bowl, cream together butter and sugar. Add vanilla essence and mix well.
    • Gradually add eggs, beating well after each addition.
    • Sift together flour and baking powder, then fold into the butter mixture using a spatula.
    • Pour the batter into the prepared cake mold.
  3. Bake the Cake:
    • Bake in a preheated oven at 160°C (320°F) for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Once baked, remove from the oven and trim any uneven top. Invert the cake onto a plate so the almond side is on top.
  4. Prepare the Topping:
    • In a bowl, mix together the jam and hot water until smooth.
  5. Finish and Serve:
    • Pour the topping over the cake.
