Summer’s Sweet Gift “Ras Malai”

Islamabad: “Ras Malai,” a dessert originating from the Indian subcontinent, is synonymous with indulgence and luxury, capturing the hearts of many with its rich flavors and creamy texture, especially cherished during hot summer days.
Crafting “Ras Malai” involves a meticulous process, beginning with the creation of soft cheese balls called “chenna.”
Served chilled, Ras Malai offers a refreshing escape from the summer heat, with its delicate flavors tantalizing the palate—a perfect balance of sweetness and spice.

Ingredients.
- Corn flour. 1 teaspoon
- The milk 2 litres
- Cashew. 35 grams
- Almonds 35 grams
- Pistachio 35 grams
- Saffron 1 pinch
- Condensed milk. 1/2 cup
- Water. 4 cups
- Chinese. 1 cup
- Lemonade. 3 teaspoons
Mixed
- Take milk (one liter) in a pan and boil it.
- Now add lemon juice to it and make milk bubbles.
- Now strain this milk by putting it in a muslin cloth and squeeze it a little to remove excess water.
- Now hang the squeezed potli again for thirty minutes so that more water comes out.
- Now pour the evaporated milk in a vessel and add corn flour to it and make it slightly soft and make a paste of it.
- Then take water and sugar in a pan and mix well.
- Then increase the heat of the stove and put the prepared pies in it.
- After that, close the lid and cook for eighteen minutes and take it out.
- Now put the prepared fruits in a vessel and dip them in the prepared juice and cool it.
- Then take milk (three cups) in a pan and add condensed milk, pistachios, cashews and almonds and cook for twelve to fifteen minutes and take it out when it thickens (milk is ready).
- Now take a pan in a vessel and pour the prepared milk mixture on it.
The delicious Ras Malai is ready to serve
