Islamabad: Bake the perfect treat with this simple Suji Cake recipe that’s soft, fluffy, and full of flavor. Ideal for any occasion and loved by all ages!

Ingredients

  • Yogurt – 1 cup
  • Icing sugar – 1 cup
  • Oil – 1/2 cup
  • Cardamom powder – 1/2 tsp
  • Milk – 1/2 cup
  • Vanilla essence – 1/2 tsp
  • Semolina (Suji) – 2 cups
  • Baking powder – 1/2 tbsp
  • Baking soda – 1 tsp
  • Orange food color – 1 tsp
  • Chopped pistachios – as required

Directions

  1. In a large mixing bowl, add yogurt, icing sugar, oil, cardamom powder, milk, and vanilla essence. Whisk well until smooth and fully combined.
  2. Add semolina, baking powder, baking soda, and orange food color. Whisk again to create a smooth batter.
  3. Pour the batter into a greased and butter paper-lined cake mold.
  4. Bake in a preheated oven at 160°C (320°F) for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  5. Garnish with chopped pistachios, let it cool slightly, and serve!

Tips:

  • For extra flavor, soak the semolina in the yogurt mixture for 15 minutes before baking.
  • Add a handful of raisins or shredded coconut for a twist!
