Islamabad: Indulge in the rich and flavorful Malai Tikka Pulao, a perfect fusion of creamy chicken tikka and fragrant rice.

This dish combines tender, marinated chicken with aromatic spices, creating a mouthwatering meal for any occasion. Whether you’re hosting a dinner or craving something special, this Malai Tikka Pulao is sure to impress.

Ingredients

For Malai Tikka

– 3-4 chicken leg and thigh pieces
– 1 cup Yogurt
– ¼ cup green chili paste
– 1 tbsp ginger garlic paste
– 1 tbsp crushed black pepper
– 1 tsp salt
– 1 tbsp crushed cumin seeds
– 2 tbsp lemon juice
– 3 tbsp oil
– 12 cups water
– 1 piece heated coal
– 1 tsp oil (for smoke)

For Pulao Preparation

– 3 tbsp oil
– 1 cup sliced onion
– 1 tbsp ginger garlic paste
– 1 tsp cumin seeds
– 1 tbsp black peppercorns
– 2-3 black cardamoms
– 1-2 cinnamon sticks
– 1 tbsp salt
– 5 cups chicken stock
– 3 cups soaked rice

Direction

Step 1: Marinating and Cooking Malai Tikka

1. In a bowl, mix chicken with Yogurt, green chili paste, crushed black pepper, salt, crushed cumin seeds, lemon juice, and Dairy Cream. Marinate for 25-30 minutes.
2. Heat oil in a pot and cook the marinated chicken for 3-4 minutes.
3. Add water, cover, and cook until the chicken is fully done.
4. Turn off the flame and place a heated coal in an aluminum cup in the center of the pot. Drizzle oil over the coal, cover with a lid, and let it smoke for 1-2 minutes. Set aside.

Step 2: Preparing the Pulao

5. In another pot, heat oil and sauté sliced onions until light brown.
6. Add ginger garlic paste and cook for a minute. Then add cumin seeds, black peppercorns, black cardamom, cinnamon sticks, and salt. Cook for 1-2 minutes.
7. Pour in the chicken stock and mix well. Add soaked rice and cook until 80% of the water evaporates.
8. Cover and let it steam over low heat for 10-12 minutes.

Once done, fluff the rice and serve this delicious Malai Tikka Pulao hot. Enjoy the perfect balance of creamy chicken and fragrant spices in every bite!
