Malai Boti Pulao Recipe

Ingredients:

For Malai Boti:

  • 800g boneless chicken
  • 1 cup yogurt
  • 3 tbsp green chili paste
  • 1 tbsp ginger garlic paste
  • 1 tsp crushed black pepper
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 1 tbsp cumin powder
  • 1/2 cup cream
  • 2 tbsp oil
  • 1 heated charcoal (for smoking)
  • 1 tsp oil (for smoking)

For Pulao:

  • 1/4 cup oil
  • 10-15 black peppercorns
  • 1 tbsp cumin seeds
  • 2 star anise
  • 4-5 green cardamom
  • 1 cup sliced onion
  • 1 tbsp ginger garlic paste
  • 1 tbsp coriander powder
  • 1 tsp crushed black pepper
  • 1 tbsp salt
  • 5 cups water
  • 3 cups soaked rice
  • Prepared Malai Boti
  • Green chilies (as required)
  • Lemon slices (as required)

Method:

  • In a bowl, marinate boneless chicken with yogurt, green chili paste, ginger garlic paste, crushed black pepper, salt, lemon juice, cumin powder, and cream. Mix well.
  • Heat oil in a pan and cook the marinated chicken until fully done.
  • Place a heated charcoal on an aluminum cup in the center of the pan, drizzle oil over the charcoal, and cover the pan to smoke the chicken for 1-2 minutes. Set aside.
  • In a pot, heat oil and add black peppercorns, cumin seeds, star anise, and green cardamom. Sauté for a minute.
  • Add sliced onion and cook until light brown. Then add ginger garlic paste, coriander powder, crushed black pepper, and salt. Mix well.
  • Pour water into the pot and bring it to a boil. Add soaked rice and cook until 80% of the water dries out.
  • Add the prepared Malai Boti on top of the rice. Also, add green chilies and lemon slices.
  • Cover the pot and steam over low flame for 10-12 minutes.
