Malai Boti Pulao Recipe

Ingredients:
For Malai Boti:
- 800g boneless chicken
- 1 cup yogurt
- 3 tbsp green chili paste
- 1 tbsp ginger garlic paste
- 1 tsp crushed black pepper
- 1 tsp salt
- 2 tbsp lemon juice
- 1 tbsp cumin powder
- 1/2 cup cream
- 2 tbsp oil
- 1 heated charcoal (for smoking)
- 1 tsp oil (for smoking)
For Pulao:
- 1/4 cup oil
- 10-15 black peppercorns
- 1 tbsp cumin seeds
- 2 star anise
- 4-5 green cardamom
- 1 cup sliced onion
- 1 tbsp ginger garlic paste
- 1 tbsp coriander powder
- 1 tsp crushed black pepper
- 1 tbsp salt
- 5 cups water
- 3 cups soaked rice
- Prepared Malai Boti
- Green chilies (as required)
- Lemon slices (as required)
Method:
- In a bowl, marinate boneless chicken with yogurt, green chili paste, ginger garlic paste, crushed black pepper, salt, lemon juice, cumin powder, and cream. Mix well.
- Heat oil in a pan and cook the marinated chicken until fully done.
- Place a heated charcoal on an aluminum cup in the center of the pan, drizzle oil over the charcoal, and cover the pan to smoke the chicken for 1-2 minutes. Set aside.
- In a pot, heat oil and add black peppercorns, cumin seeds, star anise, and green cardamom. Sauté for a minute.
- Add sliced onion and cook until light brown. Then add ginger garlic paste, coriander powder, crushed black pepper, and salt. Mix well.
- Pour water into the pot and bring it to a boil. Add soaked rice and cook until 80% of the water dries out.
- Add the prepared Malai Boti on top of the rice. Also, add green chilies and lemon slices.
- Cover the pot and steam over low flame for 10-12 minutes.
Your Malai Boti Pulao is ready to serve. Enjoy!
