Islamabad: Spicy Mutton Yakhni Pulao is a delectable dish that harmoniously combines tender mutton pieces with aromatic rice infused with an array of spices.
This culinary delight has its roots deeply embedded in the diverse and flavorful cuisine of the Indian subcontinent.

Ingredients:

  • 500 grams Mutton
  • 2 Onions
  • 4 cloves Garlic
  • 10 grams Ginger
  • 1 tablespoon Garlic ginger paste
  • 7 Green chilies
  • Salt to taste
  • 2 liters Mutton Yakhni (Mutton broth)
  • 1 tablespoon Tamarind
  • 700 grams Rice
  • 1 teaspoon Javitri (Mace)
  • 1 tablespoon Black pepper
  • 1 tablespoon Coriander seeds
  • 1 tablespoon Cumin seeds
  • 1 tablespoon Badian flower (Star anise)
  • 1 teaspoon Fennel seeds
  • 1 tablespoon Cinnamon
  • 1 teaspoon Cloves
  • 1 Tejpat (Bay leaf)
  • 1/2 cup Yogurt
  • 1 teaspoon Ghee (clarified butter)

Instructions:

Rinse the rice and soak it in water for 20-25 minutes.
Prepare a spice bundle (potli) by wrapping dried coriander, cumin seeds, Badian flower, fennel seeds, black pepper, cinnamon, cloves, and ginger-garlic paste in a muslin cloth.
In a large pot, add water, mutton, onions, garlic, ginger, and the spice bundle. Bring to a boil, then simmer for 15 minutes to make the yakhni (mutton broth).
In a separate pan, heat ghee and brown the onions. Add a bit of water and cook for a minute.
Add ginger-garlic paste and green chilies to the pan and stir well.
Add the cooked mutton (removed from the yakhni), hot spices (from the spice bundle), yogurt, and salt to the pan. Cook for 3-5 minutes.
Pour in the mutton yakhni and bring to a simmer.
Add tamarind to the pan and mix well.
Drain the soaked rice and add it to the pan. Stir gently.
Add Javitri powder, green chili powder, and a bit of water. Let it simmer for 15 minutes until the rice is cooked and the flavors are infused.
