Flavor-Packed Schezwan Chicken with Fried Rice

Here’s how you can make it:
Ingredients for Chicken Preparation
- 8-10 dried red chilies (soaked)
- 1/2 cup ketchup
- 1 ginger pod
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp salt
- 1 tsp black pepper powder
- 1 tbsp oil
- 1 tsp vinegar
Ingredients for Schezwan Chicken:
- 2 tbsp oil
- 1 tbsp chopped garlic
- Prepared Schezwan sauce
- 1 cup water
- 1 K&N’s Stok cube
- 1/2 cup water + 3 tbsp corn flour (for slurry)
- 780 g K&N’s Hot Tenders
- 1 cup julienned capsicum
- 1 cup sliced onion
Ingredients for Vegetable Fried Rice
- 3 tbsp oil
- 1 tbsp chopped garlic
- 1 cup chopped capsicum
- 1 cup chopped carrot
- 3 cups boiled rice
- 1 tsp black pepper powder
- 1 tsp salt
- Green onions (chopped), as required
Directions:
Prepare the Chicken Marinade:
In a blender, combine soaked dried red chilies, ketchup, ginger pod, soy sauce, brown sugar, salt, black pepper powder, oil, and vinegar. Blend until smooth. Set aside.
Make the Schezwan Chicken:
Heat 2 tbsp oil in a wok. Add chopped garlic and sauté for a minute.
Stir in the prepared Schezwan sauce and mix well. Add water and cook for another minute.
Add the K&N’s Stok cube and cook until it dissolves.
Fry K&N’s Hot Tenders according to package instructions. Slice the Hot Tenders and add them to the prepared gravy.
Incorporate the capsicum and onion. Cook for 2-3 minutes and set aside.
Prepare the Fried Rice:
Heat 3 tbsp oil in a wok. Add chopped garlic and sauté for a minute.
Add chopped capsicum and carrot. Cook for another minute.
Stir in the boiled rice and cook for another minute.
Season with salt and black pepper powder. Mix well.
Garnish with green onions and toss everything together.
