Ingredients

For Chicken Filling

  • 1 1/2 cups boiled & mashed potatoes
  • 2 cups boiled & shredded chicken
  • 1/2 cup chopped green onion
  • 1 cup shredded cheddar cheese
  • 1 cup chopped onion
  • 1 tsp crushed black pepper
  • 1 tbsp chili sauce
  • 1 tsp garlic powder
  • 1 tbsp red chili flakes
  • 1 tbsp soy sauce
  • 1 tsp salt

For Sauce

  • 1 cup mayonnaise
  • 1 tbsp sriracha sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt

For Bread Skewers

  • Bread slices (as needed)
  • Chicken filling (as needed)
  • Wooden skewers (as needed)
  • Beaten eggs (as needed)
  • Bread crumbs (as needed)
  • Oil (for frying)

Directions

Prepare Chicken Filling

In a bowl, combine the mashed potatoes, shredded chicken, chopped green onion, shredded cheddar cheese, chopped onion, crushed black pepper, chili sauce, garlic powder, red chili flakes, soy sauce, and salt. Mix well and set aside.

Make the Sauce

In a separate bowl, mix together the mayonnaise, sriracha sauce, garlic powder, and salt until well combined.

Assemble Bread Skewers

Trim the edges off the bread slices. Spread a layer of the chicken filling on one slice of bread, then top with another slice of bread. Cut this sandwich into small squares.

Thread the bread squares onto wooden skewers.

Dip each skewer into beaten eggs, then coat with bread crumbs.

Fry the Skewers

Heat oil in a deep fryer or skillet. Fry the skewers in batches until golden brown and fully cooked.
