Creamy White Chicken Chili and Fresh Vegetable Fried Rice

Ingredients for Chicken Preparation:

  • Chicken strips (boneless): 1 kg
  • Chili sauce: 2 tbsp
  • Egg: 1
  • Corn flour: 2 tbsp
  • Red chili flakes: 1 tbsp
  • Vinegar: 1 tbsp
  • Salt: 1/2 tsp
  • Black pepper powder: 1/2 tsp
  • Oil (for marinating): 2 tbsp
  • Oil (for frying): as required

Ingredients for Stock Mixture Preparation:

  • Chicken stock: 2 cups
  • Chili sauce: 2 tbsp
  • Thai chili sauce: 2 tbsp
  • Oyster sauce: 1 tbsp
  • Red chili flakes: 1 tbsp
  • Black pepper powder: 1 tsp
  • Salt: 1/2 tsp

Ingredients for White Chili Chicken Preparation:

  • Oil: 3 tbsp
  • Ginger (chopped): 1 tbsp
  • Garlic (chopped): 1 tbsp
  • Green chilies: 1 cup
  • Fried chicken (prepared)
  • Prepared chicken stock mixture
  • Slurry (corn flour 2 tbsp + water 1/2 cup)

Ingredients for Vegetable Fried Rice:

  • Oil: 2 tbsp
  • Garlic (chopped): 1 tbsp
  • Capsicum (chopped): 1 cup
  • Carrot (chopped): 1 cup
  • Boiled rice: 3 cups
  • Salt: 1 tsp
  • Black pepper powder: 1 tsp
  • Green onion (chopped): 1/2 cup

Directions:

  1. Chicken Preparation:
    • In a bowl, combine chicken strips, chili sauce, egg, corn flour, red chili flakes, vinegar, salt, black pepper powder, and oil. Mix well.
    • Heat oil in a pan and fry the marinated chicken until it’s 80% cooked. Set aside.
  2. Stock Mixture Preparation:
    • In a bowl, mix together chicken stock, chili sauce, Thai chili sauce, oyster sauce, red chili flakes, black pepper powder, and salt. Set aside.
  3. White Chili Chicken:
    • Heat oil in a pot, add chopped ginger and garlic, and cook for 30 seconds.
    • Add green chilies and toss. Add the fried chicken and mix well.
    • Pour in the prepared chicken stock mixture and bring to a simmer.
    • Add the slurry and cook until the sauce thickens. Set aside.
  4. Vegetable Fried Rice:
    • Heat oil in a pan, add chopped garlic, and cook for a minute.
    • Add chopped capsicum and carrot, and cook for 1-2 minutes.
    • Add boiled rice and toss well.
    • Season with salt and black pepper powder. Toss again for a minute.
    • Add chopped green onions and mix well.
  5. Serve:
    • Serve the Vegetable Fried Rice alongside the White Chili Chicken and enjoy!
