Islamabad: Enjoy this rich and flavorful Chicken Nihari, a slow-cooked dish that delivers a hearty and delicious meal.
Ingredients for Chicken Nihari:
- Oil: 1/2 cup
- Chicken: 1 kg
- Ginger garlic paste: 1 ½ tbsp
- Nihari masala: 3 tbsp
- Water: 5-6 cups
- Paprika powder: 1 tbsp
Ingredients for Garnishing:
- Green coriander (chopped): as required
- Ginger (julienne): as required
- Lemon slices: as required
Directions:
- Cook the Chicken:
- In a pot, heat 1/2 cup of oil and add the chicken. Cook until the chicken changes color.
- Add the ginger garlic paste and cook for about a minute.
- Add the nihari masala and cook for 2-3 minutes.
- Add Water and Simmer:
- Add water (5-6 cups) and cover the pot. Cook for 25-30 minutes on low heat.
- Thicken the Gravy:
- Once the chicken is cooked, uncover the pot and cook for an additional 2-3 minutes.
- Prepare a flour mixture (1-2 tbsp of flour mixed with a little water) and gradually add it to the pot, stirring until the gravy thickens. Set aside.
- Prepare the Tari (Tempering):
- In a separate pan, heat 1/2 cup of oil and add paprika powder. Sizzle it for about a minute.
- Combine and Garnish:
- Add the prepared tari (tempering) to the chicken nihari.
- Garnish with chopped green coriander, julienned ginger, and lemon slices.
