Islamabad: Enjoy this rich and flavorful Chicken Nihari, a slow-cooked dish that delivers a hearty and delicious meal.

Ingredients for Chicken Nihari:

  • Oil: 1/2 cup
  • Chicken: 1 kg
  • Ginger garlic paste: 1 ½ tbsp
  • Nihari masala: 3 tbsp
  • Water: 5-6 cups
  • Paprika powder: 1 tbsp

Ingredients for Garnishing:

  • Green coriander (chopped): as required
  • Ginger (julienne): as required
  • Lemon slices: as required

Directions:

  1. Cook the Chicken:
    • In a pot, heat 1/2 cup of oil and add the chicken. Cook until the chicken changes color.
    • Add the ginger garlic paste and cook for about a minute.
    • Add the nihari masala and cook for 2-3 minutes.
  2. Add Water and Simmer:
    • Add water (5-6 cups) and cover the pot. Cook for 25-30 minutes on low heat.
  3. Thicken the Gravy:
    • Once the chicken is cooked, uncover the pot and cook for an additional 2-3 minutes.
    • Prepare a flour mixture (1-2 tbsp of flour mixed with a little water) and gradually add it to the pot, stirring until the gravy thickens. Set aside.
  4. Prepare the Tari (Tempering):
    • In a separate pan, heat 1/2 cup of oil and add paprika powder. Sizzle it for about a minute.
  5. Combine and Garnish:
    • Add the prepared tari (tempering) to the chicken nihari.
    • Garnish with chopped green coriander, julienned ginger, and lemon slices.
