This recipe features savory crepes filled with tender chicken and a creamy cheese sauce, ideal for a satisfying weeknight dinner!
Ingredients:
For Crepes:
- 3 cups all-purpose flour
- 3 eggs
- 2 tbsp yogurt
- 1 tbsp oil
- 1 tsp salt
- 3 cups milk
For Chicken Preparation:
- 3 tbsp oil
- 500 g boneless chicken, diced
- 1 cup chopped capsicum
- 1 cup chopped carrot
- 1 cup chopped cabbage
- 1 cup chopped onion
- 1 tbsp soy sauce
- 1 tbsp chili sauce
- 1 tsp black pepper powder
- 1 tsp red chili flakes
- 1 tsp oregano
- 1 tsp salt
- 1 cup shredded mozzarella cheese
For Assembling Chicken Cheese Crepes:
- Prepared crepes
- Prepared chicken cheese mixture
- 2 tbsp oil
Directions:
Prepare Crepes:
- In a bowl, mix flour, eggs, yogurt, oil, salt, and milk until smooth.
- Heat a non-stick pan over medium heat and pour 1/2 cup of batter, swirling to coat the bottom evenly.
- Cook each side for 1-2 minutes until lightly golden. Set aside.
Prepare Chicken Mixture:
Heat oil in a pan over medium-high heat. Add diced chicken and cook until it changes color.
Add capsicum, carrot, cabbage, and onion. Sauté for 1-2 minutes until vegetables are slightly tender.
Stir in soy sauce, chili sauce, black pepper powder, red chili flakes, oregano, and salt. Cook until chicken is fully cooked through.
Remove from heat and stir in shredded mozzarella cheese until melted. Set aside.
Assemble Chicken Cheese Crepes:
Place a prepared crepe on a flat surface. Spoon chicken cheese mixture in a triangular shape on one half of the crepe.
Make a slit in the crepe from the center to one edge of the filled side.
Fold the crepe over the filling to form a rectangular shape.
Cook the Crepes:
Heat oil on a griddle or non-stick pan over medium heat.
Toast the prepared crepes on each side until golden brown and crispy.
Transfer the cooked crepes to a serving plate.
