Islamabad: Prepare to tantalize your taste buds with this irresistible Chicken Tikka Paratha Roll recipe! Succulent grilled chicken tikka, nestled in a warm, soft paratha, and drizzled with a zesty chutney—pure perfection in every bite!
For Chicken Tikka:
- Chicken (boneless cubes): 1 kg
- Yogurt: 1 cup
- Ginger garlic paste: 1 tbsp
- Cayenne pepper powder: 1 tbsp
- Tikka masala: 2 tbsp
- Lemon juice: 1 tbsp
- Red food color: 1/2 tsp
- Oil (for cooking): 3 tbsp
- Heated coal: 1 piece
- Oil (for smoke): 1 tsp
For Green Sauce:
- Fresh coriander: 1 cup
- Mint leaves: 1/2 cup
- Garlic cloves: 3-4
- Cumin seeds: 1 tsp
- Salt: 1/2 tsp
- Water: 1/2 cup
- Mayonnaise: 1 cup
For Tamarind Sauce:
- Tamarind pulp: 2 cups
- Sugar: 1/2 cup
- Cumin seeds: 1 tsp
- Red chili powder: 1/2 tsp
- Ginger powder: 1 tsp
- Red chili flakes: 1 tsp
For Assembly:
- Parathas: as needed
- Prepared chicken: as needed
- Cucumber (julienned): as needed
- Onion (sliced): as needed
- Tamarind sauce: as needed
Directions
- Marinate the Chicken: In a bowl, combine chicken cubes with yogurt, ginger garlic paste, cayenne pepper powder, tikka masala, lemon juice, salt, and red food color. Mix thoroughly and marinate for 15-20 minutes.
- Cook the Chicken: Heat oil in a pan, add the marinated chicken, and cook until fully done. Once cooked, turn off the flame.
- Smoke the Chicken: Place a heated coal piece in an aluminum cup in the center of the pan. Drizzle a bit of oil over the coal, cover the pan, and let it smoke for 1-2 minutes. Remove the coal afterward.
- Prepare Green Sauce: Blend the coriander, mint leaves, garlic, cumin seeds, salt, and water until smooth. Mix in the mayonnaise using a whisk and set aside.
- Prepare Tamarind Sauce: In a pan, cook the tamarind pulp, sugar, cumin seeds, red chili powder, ginger powder, and red chili flakes until the sauce thickens.
- Assemble the Rolls: Lay a paratha flat, add a layer of the cooked chicken, followed by cucumber julienne and sliced onion. Drizzle with the prepared green and tamarind sauces. Roll the paratha tightly and serve.
