Ingredients for Mutton Roast
- Mutton: 1 kg
- Oil (for frying): as required
- Yogurt: 1 pack
- Chili garlic sauce: 1/4 cup
- Coriander powder: 1 tbsp
- Red chili powder: 2 tbsp
- Cumin powder: 1 tbsp
- Salt: 1 tbsp
- Red chili flakes: 1 tbsp
- Ginger garlic paste: 1 tbsp
- Lemon juice: 2 tbsp
- Chat masala: 1 tbsp
- Orange food color: a pinch
- Aluminum foil: as required
- Water (for steaming): as required
Ingredients for Raita
- Yogurt: 1 pack
- Cumin seeds (crushed): 1 tsp
- Black pepper powder: 1/2 tsp
- Salt: 1/2 tsp
Directions
Heat oil in a pot and deep fry the mutton pieces for 1-2 minutes. Set aside.
In a bowl, combine yogurt, chili garlic sauce, coriander powder, red chili powder, cumin powder, salt, red chili flakes, ginger garlic paste, lemon juice, chat masala, and orange food color. Mix well.
Add the fried mutton to the mixture, ensuring it is well-coated. Marinate for 1-2 hours.
Wrap the marinated mutton in aluminum foil and steam over low heat for 45 minutes or until fully cooked. Set aside.
For the raita, mix yogurt, crushed cumin seeds, black pepper powder, and salt in a bowl.
