For Soaking the Chicken Wings:
- Water (as needed)
- Shan Ginger Garlic Paste: 2 tbsp
- Vinegar: 1/4 cup
- Salt: 1 tsp
- Chicken wings (with skin): 1 kg
- Lemon juice: 2 tbsp
- Mustard paste: 1 ½ tbsp
For the Dry Mixture:
- All-purpose flour: 2 cups
- Red chili powder: 1 ½ tbsp
- Salt: 1 tsp
- Black pepper powder: 1 tsp
For Frying:
- Marinated chicken wings
- Dry mixture
- Chilled water
- Oil (for frying, as needed)
Directions
- Soak the Chicken Wings:
- In a bowl, mix water, Shan Ginger Garlic Paste, vinegar, and salt. Add the chicken wings and mix well. Soak for 15 minutes. Set aside.
- Marinate the Chicken Wings:
- Remove the soaked chicken wings and pat them dry. In a separate bowl, combine Shan Ginger Garlic Paste, hot sauce, black pepper powder, red chili powder, salt, lemon juice, and mustard paste. Add the chicken wings and mix well. Marinate for 20-25 minutes.
- Prepare the Dry Mixture:
- In a bowl, mix all-purpose flour, red chili powder, salt, and black pepper powder. Set aside.
- Coat and Fry the Chicken Wings:
- Coat the marinated chicken wings in the dry mixture. Dip them briefly in chilled water (about 2 seconds), then coat them again in the dry mixture.
- Deep fry the wings in hot oil until crispy and the chicken is tender.
