Rich, creamy rice pudding infused with the warm, buttery flavor of caramel creates an irresistible treat. This easy recipe is perfect for beginners and is sure to impress everyone at the table.

Ingredients for Soaked Rice:

  • 1 cup Rice
  • Water (for soaking), as required

Ingredients for Caramel Syrup Preparation:

  • 400 g Sugar
  • 1/4 cup Water

Ingredients for Creamy Kheer:

  • 2 liters Milk
  • Caramel syrup
  • 1/2 cup Almonds + 1/4 cup Pistachios, chopped

Directions

In a bowl, add rice and enough water to soak. Mix well and soak for 30 minutes.

Drain the water from the soaked rice and break the rice into small pieces with your hands.

Set aside.

In a pan, heat sugar over medium heat until it melts and caramelizes. Be careful not to burn it. Once caramelized, carefully add 1/4 cup water and mix well to make caramel syrup. Set aside.

In a large pot, heat milk over medium-high heat. Add the soaked rice and cook for 15-20 minutes, stirring occasionally, until the rice is tender and the mixture thickens.

Gradually add the caramel syrup to the kheer mixture, stirring continuously. Cook until the kheer thickens further and reaches your desired consistency.

In a separate preheated pan, lightly roast the almonds and pistachios for 1-2 minutes until fragrant.

Add the roasted nuts to the kheer mixture and mix well.

Dish out the creamy kheer into serving bowls, garnish with more almonds and pistachios if desired, and serve warm or chilled.
