Islamabad: Fried rice is undoubtedly one of the most cherished Chinese dishes, versatile enough to complement any side dish. It’s quick to whip up and bursting with flavors.
This recipe, loaded with vegetables, adds a healthy twist to the classic. You can prepare and relish vegetable fried rice in under 30 minutes.
Ingredients:
- 2 cups boiled rice
- 1 tablespoon soy sauce
- 1 tablespoon minced garlic
- 1/4 cup carrots, diced
- 1/4 cup cabbage, shredded
- 1/4 cup green onions, chopped
- Black pepper, to taste
- 2 tablespoons sunflower oil
- 1 tablespoon vinegar
- 1/4 cup onion, finely chopped
- 1/4 cup red bell pepper, diced
- 1/4 cup green beans, chopped
- Salt, to taste
Instructions:
Begin by boiling the rice and setting it aside.
Prep all your vegetables, chopping them finely and arranging them on a plate.
Heat 2 tablespoons of sunflower oil in a pan. Add the minced garlic and fry for about a minute until aromatic.
Toss in all the prepared vegetables and sauté them for 3-4 minutes, maintaining a high heat.
Pour in the soy sauce and vinegar, stirring well to coat the vegetables. Allow it to cook for another minute.
Season with salt and black pepper according to your taste preferences. Cook for a final minute, ensuring the flavors meld together.
Once done, garnish your vegetable fried rice with chopped green onions.
Serve hot alongside Chili Paneer or Manchurian for a delightful meal.
