Islamabad: ‘Aloo Bukhara’, also known as dried plums or prunes, is indeed a versatile fruit with a sweet and sour taste, and it’s packed with health benefits.
One popular way to enjoy its flavors is by making chutney, which is not only delicious but also known to aid digestion.
Here’s a simple recipe for ‘Aloo Bukhara chutney’:Chutney Ingredients:
1 pao ‘Aloo Bukhara’ (dried plums/prunes)
1 pao tamarind
10 almonds
1/2 pao sugar
1/2 teaspoon raisins
4 pods garlic
4 pods red pepper
1 teaspoon ‘kalonji’ (nigella seeds)
1/2 cup white vinegar
1/2 teaspoon salt
Chutney Instructions :
Soak the ‘Aloo Bukhara’ and tamarind separately in water for a few hours or until they become soft.
Remove the seeds from the ‘Aloo Bukhara’ and tamarind once softened.
In a blender or food processor, combine the soaked ‘Aloo Bukhara’, tamarind, almonds, sugar, raisins, garlic, red pepper, kalonji, white vinegar, and salt.
Blend until you achieve a smooth paste-like consistency.
Transfer the mixture to a saucepan and cook over medium heat, stirring occasionally, until the chutney thickens and reaches your desired consistency.
This typically takes around 15-20 minutes.
Taste the chutney and adjust the seasoning if needed.
Once done, let the chutney cool down to room temperature.
Transfer the chutney to clean, airtight jars and store them in the refrigerator.
Serve the ‘Aloo Bukhara’ and tamarind chutney as a condiment with your favorite snacks or meals.
